Making the mushroom filling correctly, getting the beef to a proper non-show-leather doneness while cooking the rest properly, wrapping it correctly without it tearing but not making the pastry overly thick, putting to use decoration on the wellington and having the cook make that decoration look appealing instead of burnt to hell, etc
tldr you can skip a bunch of things and make a lazy version that's 60% as good while being 20% as hard to do, which you did. Nothing wrong with that but there's a difference between what you did and what people describe as difficult.
