A restaurant in my area got a bad review for serving rotten noodles. The owner replied "bitch, we ain't even got no noodles! idk where the fuck you wuz eatin' but it ain't here, faggot" or something like that. I thought it was funny.
In situations where the post is a blatant lie, I saw sure. Otherwise, no.

Patrons will not bring up an issue during the meal but bring it up after from the safety of their computer. The restaurant never got a chance to make things right, so that can be the first time the owner is hearing about the issue.

Obviously a business should defend itself to a reasonable extent to protect their reputation. Rumors can really destroy in the food business.

Taking and responding to feedback is good, however responding like a child with a broken keyboard isn't. It is funny though, usually happens a lot to restaurants that get review bombed for any reason at all. Nobody wants to eat at that 1 star reviewed restaurant when there are plenty of 4-5 stars around the area.

Fellow restauranteur, here. I've only ever replied to one review, a one star complaining about my fish and chips. All I said was "sir, this is a pizza place. We don't sell fish and chips".
Other than that, if there's a bad review, I just bring it up with my staff, try to figure out who cooked what and make sure it doesn't happen again.

Well, it's part of hospitality training to act like you care about all. But, I always find it overly defensive and argumentative. It seems to rarely be done right. It also seems like they are calling the complainant stupid, or even a fake competitor, which is could be...both of which comes across as the opposite of intention of reply.
When I come across a shitty review, I usually can read between the lines, but then wonder why they only have 3 reviews in total if they were so amazing.
