I'm a single adult male. I cook for one person, me. I'm not buying a bunch of tomatoes and roasting them and then cooking them in a pan all day just to make my sauce. I eat pasta with tomato sauce maybe once a month, it's just not worth it for me

What if I start with a pan of butter and onions and garlic and after cooking them down I add a few cans of diced and crushed tomatoes, and then I dump in a jar of Ragu so I get the best of both worlds?

If I'm baking a 11x17 deep tray of lasagna for a holiday get together, damn right I make my own sauce. It's got a pound of italian sausage, pound of ground sirloin, onions, peppers, garlic and a very large can tomatoes in puree, plus sauce and paste. It's perfect to use 3 cans and one can will be low sodium so I can reduce further.

The rest of the time, I'm just fine opening a jar for a pound of noodles. It will not be low end or sugary. Whatever meat main entree will be the star, and sauce use will be minimal. Sometimes you want marinara sauce for eggplant, portobellos or chicken parm or to help your subs of italian sausage lovingly grilled. I'm also fine to use a jar of whatever brand to dip some homemade calzones or mozzarella sticks in. There are only 2 crappy sauces in your picture, OP.

you just downgrade your sauce that way.
at least try to use good canned tomatoes from italy. stuff like Mutti Polpa isn't expensive but it's still miles better than the cheapest cans which are always chinese Frankenstein tomatoes

tomato is so over powering that nothing you add will make much of a difference. just add sugar to neutralize acidity and a little wine... the sugar is the most important ingredient if you don't have naturally sweet tomatoes like san marzano... even something as strong as wine you will barely be able to taste over the tomatoes

I'd love to make my own sauce because 90% of sauces have sugar in them automatically making them taste like shit and the rest never have that right tangy flavor. I grew up with Catelli but its distribution was fucked and hidden in random dead stores; it's now in a dollar store which is the only thing in a basement of a run down mall. It now tastes bad to me but going years without being able to find it it is hard to tell when it changed.
Buying tomatoes to make sauce instantly doubles the cost or worse making what is meant to be a cheap meal outside my budget.
Tomatoes are one of the few things it is definitely cheaper to buy the product than make it. I would assume due to their fragility in transport. I got a gallon of pizza sauce for $7 when the soda sized cans are $3. Just had to portion and freeze it.

It's not worth the time or effort to get a sauce as good as Rao's, and it's barely any cheaper if you buy San Marzano tomatoes and factor in the energy cost to run the stove all day. Only way I'd bother is if I grew my own good tomatoes, then it might be worth it.

you just get canned tomato sauce and a tube of tomato paste. put some oil in the pan, fry some of your favorite spices, then throw onions and garlic in, then put the tomato sauce and tomato paste in and simmer for as long as possible. that's all you have to do, it's the easiest thing in the world.

I agree with you, OP.

The most fun aspect of cooking pasta is trying different sauces.
I've made bolognese, quattro formaggi, mushroom sauce, rose sauce, bechamel sauce.
As well as my own cheddar sauce recipe which is a variant of bechamel with a lot of cheddar melted into it.

It's a lot of fun to experiment with. Even if you are a fuckup in the kitchen, you cannot get filtered by sauce, it's piss poor easy. And canned sauces are garbage. So there is no reason not to.

My next challenge is making homemade pesto, that one is gonna be hard to get right.
