Mexican cuisine is basically still Aztec-Mayan cuisine + rice, chicken, beef, pork, onions and a few other euro ingredients incorporated after.
But many dishes are literally Mesoamerican. Like pozole was literally a Human sacrifice ritual stew, they replaced the Human flesh with pork and still eat it today.
The pinto beans are the same beans the Aztecs grew. Turkeys were bred by the Aztecs for meat.
The corn flour tortillas are also native. (The ones made with regular wheat are from Spain).
You will also find that below the Panama canal the level of spice dimishes as well, as below Panama you cross into the Inca area of influence. The Incas weren't so fond of chili peppers. There the cuisine is more about potatoes, corn stews, cassava, etc. Just as the Mesoamericans were autistic about chili varieties, the Incas were autistic about potatoes, and they selectively bred and categorized like hundreds of different varieties to be grown at different altitudes.
