What do you want to know? Its healthier for you, it has a higher smoke point than most, it's cheaper, it's more abundant and available, it's neutral tasting so you can use it in anything, it has better non-stick properties than other oils or fats, has more vitamin k, vitamin e, omega 3's than butter, it's a fucking miracle oil. There are very few times when I wouldn't use canola. They are few, but they exist. I know I missed alot of advantages but that's just what popped into my mind.

I've shelled out for a bottle of fresh pressed EVO flax oil and i swear it's just as nice as a good olive oil
I do need to keep it in the fridge and they say for optimal health benifits it has to be used within two weeks
So I used to for everything from frying to salads.
The fried food is goldenbrown and delicious like Avocado and Canola cannot, no smoke and I am starting to like the taste
If you can find some with a pressing date that isn't more than a month or so old use that

Oh, thanks for reminding me. Canola has a much longer shelf life than pretty much any other oil such as olive, coconut and doesn't require refrigeration, freezing or special accommodations.

Truly a miracle cooking oil.

Because the "seed oil bad" studies were done 40 years ago, which were rooted in debunked "oxidant antioxidant" junk science.
They were done with seed oil formulations of the 80s.
"seed oils" of today look nothing like seed oils of 10 years ago, let alone 40 years ago and lack large amounts of omega-6 anyways.

Half of the reason excessive omega-6 was thought to be bad was due to how trans-fat interacted with them in your body anyways. Trans-fat have been banned for almost 20 years now.

Canola oil is cheap and tastes shitty. Its used in shitty fast food. That doesnt inherently mean its some poisonous super carcinogen, despite what the clickbaiters are trying to shill.

Butter for tasty stuff at non burning temps, had ghee for a while but stopped after running out (i'll make it myself in bulk one day, but that's more for fun and not needed), cheaper olive oil for everyday normal, chicken schmaltz near the end of pan frying for flavour (perhaps before pouring any liquid) since it burns at higher temps like butter, on occasion bacon lard (but I only have a limited amount) when it seems right for the recipe instead of everything else, ideally peanut but usually veggie oil (so rapeseed) an the rare deep fry of corn dogs or chicken.

Yeah that's it. Haven't discovered any use for others

Those same "big companies" are the ones selling you seed oil alternatives at 5-10x the price.

Well, if we look at it from a science viewpoint EVOO shouldn't be used for cooking. Yet, southern Europeans cook with it anyways and have the lowest amounts of cardiovascular deseases which is linked to the use of EVOO. If I have grass-fed tallow I'll use that for cooking but else i'll take my chances and use evoo. Unless for frying, then tallow > lard > ghee
