I have 10kg of very boiled, very tasteless, very nondescript chicken meat, courtesy of my local hospital kitchen.

Any cool ideas on what to do with it?

the only ingredient that might be hard to find in kilostan is the chipotles in adobo seasoning, and while not critical, mexican oregano just use med oregano and marjoram
you can genuinely substitute chipotle tabasco for chilis in adobo

One of their problems, as someone who had to do some hospital time, is that they have to start with the most bland options for people who are falling apart and can barely digest anything, might have high blood pressure, or whatever.

I broke my pelvis in an accident in the UK and had to spend time in both UK and American hospitals, and they can only do so much to not fuck with people's blood pressure, give them nasty terrible shits, or whatever. Making enough base food for hundreds or more people is a challenge. I got to know some people in my time there that did their best to make things palatable.

Yeah, they've got some pretty tough challenges to be sure. Where I had the most experience, they had a lot of variations for special restrictions (vegetarian, blood pressure issues, etc.) as well as more general categories (e.g. clear diets for the "can barely digest anything" crowd), but it was a pretty big hospital so they probably had more resources to address that kind of thing. I imagine smaller ones have to do more of a one-size-fits-most.

I like to make a white lasagna, which is chicken alfredo but lasagna. You'll want to hit them with a more-than-generous dash of salt and pepper, but that'll use up a good amount. Basic casseroles would be a good idea too. Shred it, little BBQ sauce and some good rolls and you've got a pulled chicken sandwich.
