The stuffed crust pizza fad never seemed to go away but it objectively does not work for pizza.

I would wager that few people actually enjoy the stuffed crust pizza, which is strange because the stuffed crust pizza is a mainstay at every single pizza shop, and why? Well Nassim Taleb said it's due to the mathematics of FOMO, and how a small minority or interests can dominate a system. Everyone assumes that everyone wants it. But no one really does. Still you are forced to cater to the niche or else be known as the one place without it. This principle consistently applies to bigger systems, likely, even in everyday customs and habits that we deal with any take for granted without realizing it is not actually ideal.

As a lowcarb guy I'm going to pack as much cheese and meat into and onto any pizza I do eat as to make the ratio better for me. The more I fill up on the good stuff, the less actual dough I will consume. I can make a pizza last a couple of days if I load it up with cold cuts and extra cheeses and veggies.

In 30 years I never once found it memorable in any way. Not even back when pizza hut was adding the one slice of pepperoni at the end of each cut inside the crust. The extra cheese doesn't really compliment the flavor or anything. It's just there.

More likely it was for people who would normally throw the crust away. But now that it's no longer just bland crust but now has something to make it more appetizing, they may see it as worth eating for later.

Also, I get that stuffed crust came onto the scene as "cheese inside of the pizza crust". But I'm sure they can stuff the crust with anything rather than just cheese. I mean, they could stuff it with just pepperoni or sausage if they wanted to.

Problem is crust is the result of how pizza is made. Pizza is stretched outward and the larger bubbles stay to the outside and then as it cooks the cheese contracts so that it will tend to pull away from the outside.
But people only have an image of what the result should be and try to mimic it by intentionally making this larger outside portion with no toppings.
If the crust is bad the pizza was bad.

Only thing I don't like is when the stuffed crust isn't fully melted.

the problem is not with "gluttony", the problem is with the fact that the same places that offer this stuffed crust also have it stuffed with just the most fuckin tasteless cheese rather than something interesting

Stuffed crust only works for low quality pizza. With a good pizza you can bite into only the crust and it tastes good. With low quality pizza you may as well throw the crust away.
Stuffing the crust with cheese makes the crust edible and saves a bad pizza.
If it's not on a low quality pizza then it's just a gimmick. You eat it for the novelty.
