I had a macbook in 2015 but I fucking hated using MacOS. I hate how they constantly change shit and troubleshooting stuff on your own is next to impossible.

Is macOS better now that it was in 2015? Do they keep changing the os making it hard to find support?

I love how much freedom and speed I have with windows, but having a device that has seamless compatibility with all my other apple devices is very appealing, especially since i plan to do a lot of editing with videos I make on my phone.

With a Macs you get a great screen, keyboard, trackpad, CPU, and general build quality.
But the baseline 16/256 is obviously not suitable as your main or only machine. If you just need it as a chill secondary device or for occasionally maintaining some Apple-specific projects, it could work.
If you do want it as your main machine then you are going to be paying out the ass for the higher spec models.
