カタカナ in modern Japanese is for portraying the sounds of words that otherwise don't have a written (i.e. Chinese 漢字) representation, like foreign names ジョン or something
That name ジョン is basically just sound without further meaning so they write it out in sound

There's lots of words in Japanese too that even though technically you can write them out in 漢字 people don't think about the literal meaning of the word and the word is basically just a sound

Like why is ゴミ usually written in katakana even though it's not a foreign word and you could write it in 漢字, 塵?

とにかく、猫の漢字の偏(へん、漢字の左側)は他の動物と同じだ。
狗はあんまり使わないが、ファンタジーアニメを見たらきっとその内、猪と獅子を見つける

描 is based on 手廿田 (hand, 20, rice field), so I assume other hand crafts also use 手 on a similar way. I'm pretty sure I saw it on the kanji for calligraphy.

originally 犬 is a word for a larger dog and 狗 is smaller, today 狗 is the more normal word for "dog" in chinese

犭as noted is the form 犬 takes on the left side of a character in the same way 水 deforms to 氵
so that actually 獣 is also the 犬 radical just like 狗 or 猫 are 犬編, they're all 犬
even a character like 猶 is technically 犬偏, even though the meaning doesn't immediately seem to have anything to do with animals or dogs
説文解字 defines 猶 as:
>猶 玃屬 从犬酋聲
猶: a type of 玃 (monkey/primate), from 犬, 酋 voices

描 is not "手廿田", it's 手(扌) plus 苗, which is the phonetic component giving voice, びょう, just like in 猫 as in 愛猫 (あいびょう) or 描画 (びょうが)
艹 in 苗 or 描 or 猫 is not 廿 it's 艸 which is a radical for grass or plants, which is why it's used in 苗

" cangjie input " is the way you type the character on a special chinese keyboard layout, it's completely different from the actual composition of the character
further along in the same line of character information it will show

if you use https://kanji.jitenon.jp you can find a 漢字構成 "kanji composition" section that shows the composition like this

"cangjie" refers to this keyboard layout where each key is assigned to a character that you use to build other characters out of components that vaguely look like those characters

it's very difficult but theoretically you can build any chinese character out of these characters as a base

but it's irrelevant for japanese because it's barely even used in chinese speaking countries as far as I know

Anything you're doing in Japanese instead of idly surfing the internet in English is a good thing, but it may not necessarily be very effective compared to other things in Japanese. Keep in mind that unlike English where we managed to get by with half broken grammar and just reading random words next to icons and magically learned everything because it was similar enough to kinda make sense, Japanese has very different grammar and you cannot read the letters from day one so you will have to study, it is unavoidable. That doesn't mean you have to study forever though, eventually you know enough words to make studying fun immersion time.

I haven't played the sims since I was a kid so I don't know. What worked for me was Shoujo manga, Slice of Life anime, Romance VNs, Fantasy Anime, JRPGs, but I have an interest in that which kept me going.

Are you starting from zero? I'd learn kana(hiragana+katakana) as a must before doing anything else, find a grammar guide for the most basic of the grammar out there, do kaishi1.5k anki deck, and start reading and watching anime with help of tools like Mokuro OCR + Yomitan (mine word directly to anki) for manga and Memento for Anime (mine words and sentence with original audio directly to anki), and look up some extra grammar in DoJG whenever you get confused.
This is probably too many weird words and annoying things to set up. I forgot what it's like to start from zero at this point. Anyways just try to learn a little bit of everything with the help of Anki flashcards and read and watch something every day.

There's a few guides here and there, one in the OP thread even.
Learnjapanese.moe seems most straightforward to me, but I never followed a guide and spent a lot of time in the beginning just trying different things so I cant vouch for any.

My problem is that I was an idiot and I studied 20-30 new cards each day for the first 1000 or so cards but that just meant that doing my anki deck now has become very difficult at 3000 cards because I don't know each card well enough. It takes me 30-40 minutes to do my deck and then when I have an unexpected late shift that becomes nearly an hour and it became too much and I started to hate Japanese

When you start to associate japanese with the chore (and torture) that is doing Anki, that's when it's best to stop with Anki or at least give it a break. Use that "extra" time for immersion with things you want to read/watch, and try to associate the language with something you like, not to what you hate.

Don't force yourself to read/watch what you don't want just because "it's easy for beginners". One of the key factors for immersion is to expose yourself to what you like and want to see in the target language. Personally, I've been watching seasonal anime with JP subtitles every time it's available (Erai-raws and ToonsHub releases usually have JP subs), reading the manga I follow in raw aggregators whenever possible, and recently trying to play a JRPG in japanese. You don't need to do all of this at once, least you get overwhelmed by the sheer amount of vocabulary, but you truly need to do immersion with what you like, and not push yourself to consume content that you find boring.

RKRN comes from an initialism for 落乱(らくらん)/RaKuRaN short for 落第忍者乱太郎 (らくだいにんじゃらんたろう).

Many kanji were simplified after ww2, like 覺 haven been made into 覚. But for good or bad the scope was only within 当用漢字 (predecessor of 常用漢字), which led to the situations as you posted, where kanji itself is not 常用 while a part of it is.
For example, 轢く(= ひく/ to run over) is usually written like this since it isn't 常用 while 楽 in 車+楽 (= originally 樂) is.
Some non-常用 kanji have the traditional part replaced though, getting two "normal" forms, like
掴む = 摑む (=つかむ/to grab, catch, comprehend ).

こんなこと言うと「外国人差別だ」って言われそうだけど、俺は発展途上国から来て日本に住んでいる外国人にあまり良い印象を持っていない。

なぜなら、俺の母の実家が空き巣に入られたから。
家の中に土足で入られてあらゆるものが無惨に荒らされた。もちろん、警察に通報した。
その後しばらくして犯人が逮捕されたけど、そいつらはパキスタン人の2人組だった。
周辺の家々を金目の物目当てで荒らしまくっていたらしい。

あとスーパーのレジで働いていた時、無礼な態度を取ったりすぐ激昂したりする奴らは中東出身者っぽかったな。
タバコを吸わない俺はタバコの銘柄が分からないから「名前じゃなくて番号で言ってくれ」って言ったら、それだけで大激怒されたわ。
「何で分からない!!!」ってね。
その上「こいつ頭は大丈夫なのか?」みたいなジェスチャーもされた。

俺の知る範囲では、白人や東アジア人は基本的に問題を起こさなかったな。
黒人はあまりいなかったので分からない。

もちろん、全ての外国人に当てはまるわけじゃなし、クソみたいな態度の日本人もいるのは分かってる。
でも、こういう礼儀も教養もなく感情も制御できないような外国人を移民として受け入れたら、日本は…まぁ、想像にお任せする。

覺 or 覚 is a character with multiple 音読み where the reading affects the meaning of the word
as かく with a final -k it means "to become aware"
as かう with a 去声 tone it means "to awaken"
but japanese uses the かく reading in most words as a 慣用音 customary reading that doesn't reflect the original meaning

so actually 覚醒 should be こうせい but it's read かくせい by custom

same with words like 撹拌 which should be こうはん but they read it かくはん sometimes by analogy
the かく reading of 撹 does not actually exist in chinese but the japanese just assumed that it should

If I spent around 2 months studying the Keishi 1.5k deck and grammar (probably will download the Dictionary of Japanese Grammar deck), is that a good enough base to start reading actual novels? Not light novels, I mean things like Higashino Keigo or Kawakami Mieko.
I'm pretty fluent in Korean (TOPIK 6) so I expect to grasp the grammar pretty fast, and I've forced myself to finish a novel and sentence mine with low comprehension before, just to give some context.

Depending on your career field it's better to get there by the means of your own profession than through teaching jobs. I work as a software engineer and it's not extremely hard to get a job in a japanese company, the only major requirement being N1 and actually being able to speak japanese.
