The carbines were designed to be used in close-quarters and on horseback. They were made to be shoulder faster. The rifles were designed with precision in mind, they had a more pronounced curve that was more stable for shooting standing.

Crescent buttplates were the style for American precision rifles and had been since the days of flintlock long rifles. They work fine if you have one that fits you, but most people are too big nowadays.
Carbines are more combat oriented where shouldering quickly is needed, hence the flatter buttplates.
