Its better to weigh ingredients on a scale in comparison to volume measurements. Plus you start to think of recipes in ratios. Like 300g of water to 500g flour will give a hydration ratio of 60%. Once you get accustomed to using these ratios, you don't need to look at recipes. You just break out a scale and make your dough. It is the superior way of doing things.

That means pots, pans, gas, etc. Finally, the time investment. Not only do you need to cook, but you also need to clean.
