Why don't Americans eat bunnies anymore? The rabbit meat market in modern America is so small that much of it is imported from countries like New Zealand, Spain, or even China. And even then, it is tiny compared to other markets like poultry. The rabbit meat market in the US is around 800 tons per year, while the beef market is 12.7 million tons, or nearly 16,000 times larger by volume.

But this wasn't always so. Up through the 1960's, rabbit was a staple of American cuisine and diet. Look through older cookbooks - most have an entire section on rabbit. Rabbit was considered an affordable and accessible meat that could be prepared anywhere from simple and quick to extremely fancy and ornate. Hunted rabbit meat was also an important part of the market, and local rabbit pelt products used to be sold at many stores.

Why did this change after the 1960's? Why did Boomers decide to stop eating bunnies?

Meat is too lean. Rabbit starvation because they have no fat at all. So you're starving at the same rate as people who eat nothing because of all the energy you're using to digest the protein. There are preppers who raise them and eat them, same with quail but they're so small compared to chicken or turkey. Even bears in Alaska eat mostly the skin of salmon, the eyes and brain but leave the salmon meat because it's too lean for them. Just shows you how fat is so important to a diet.

Fat is where the flavor is, and rabbit has almost no fat. Fat tastes damn good. In addition, they're more expensive to raise/farm than chickens, the meat tastes worse, and it's more expensive. Eating rabbit is like eating squirrel or rats or something ... ie- no reason too if you have access to chicken, pork, beef

'Rabbit starvation' isn't relevant to people with any sort of non-starvation diet. You could literally eat some roasted earthworms from time to time to avoid that if you somehow only had rabbits around and absolutely nothing else.

But that brings up another food which has largely vanished from American cuisine - fish-head soup and fish-part dishes in general. Cod livers are still somewhat popular with preppers and exercise bros, but something like fish-head soup used to be a common dish at the dinner table.

Many people thought (probably correctly) that it was good for you, and that it was something to eat during colds or illnesses. Bags of fish heads for soup used to be routine items at grocery stores.

rabbit is considered a poultry item and during the Clinton years and before during Reagan there was a rapid fire attack on slaughterhouses. Most poultry slaughterhouses shut down, the remaining facilities didn't want to deal with rabbits. Once the Bush and Obama years came around then you had a steady drumbeat of consolidation with facilities merging or being made irrelevant by bigger industrial plants.

Have you ever had rabbit? Compared to chicken, it's pretty unappetizing, and has lots of little bones in the meat that makes eating it unpleasant compared to chicken. That's why rabbit became less popular in the US. Chickens replaced them because they taste better, and produce eggs (which are a major stable of our diet). Then we have cows, which we use the entire body for things, plus dairy which is also huge here.
Rabbits are just niche, because there's so little utility to them.

Rabbit tastes fine to me. And its lean quality makes it easier to apply special cooking techniques, like the flambée. A shot of bourbon over a roast bunny plus a quick fire gives you a delicious sweetened surface. The same thing with fatty meat risks a larger fire and tastes burned afterwards.

Because pic related is far easier and more economical to raise, process, and get to market on an industrial scale and tastes about the same.
Breed up a rabbit that does what the Cornish Cross does, invent a giant tumbler you can throw it into that skins it in 10 seconds, and you can probably make rabbit a viable market again, but it hasn't got much flavor, is more work to dress out and is 50% worse FCR and twice the time to process vs hybrid broiler chickens.

How do you pluck them on an industrial scale? I know they're popular, cheap and plentiful in China but I reckon they lean heavily on cheap slave labor for processing. Otherwise, they're still not as efficient as Cornish Cross to get to the table and most of the popular meals we use chicken for in the west don't work with duck.
I bought some geese this summer and am going to do one up for Christmas dinner, I'll report back if I figure out why people don't eat them anymore.

Depends on how it is cooked. If the heads are stewed at high heat for hours, the hard bones and tough cartilage soften a lot and become edible. If not, they are mostly inedible, and only the soft meat and eyeballs are easily chewed up and swallowed.

But to be honest, I also like to bite the ends off of animal bones and suck out as much marrow as possible. So I might not represent the typical modern American meat-eater.

Too many struggle meals. People ate rabbit and when it went from choice to famine it was viewed in a negative light. Silent gen so traumatized they never ate it again. One side of my family was poor share croppers. He hated cornbread and would throw a fit if his wife ever made it. So grandmother grew up not making it and mother grew up not making it. It had to be biscuits. Same thing with beet sandwiches, used to be a common meal, then famine, then taboo.
There's also a regional thing. If you eat a lot of game you probably eat rabbit when you can, or might even raise them. I eat squirrel, bobwhite, all that stuff. Except hog unless it's female because mouth full of manhog is gay and tastes like it smells, piss.
Whats funny is some places in America think rabbit is fancy and pay more for it than beef. Generally if you know a farmer it's going to be cheaper than beef. But food prices are backwards in America. Unless you buy a whole lamb it costs more than beef. Goat is cheaper than either, mutton is all but unavailable.

Idk anon. I do find eating rabbit more than 2-3x in a week has a tendancy to g8ve me the shits. Perhaps im not used to all thr protein. But i actively hunt them with a 22lr. Same for squirrel. Majority of my meat comes from chicken, wild turkey, or duck though. With venison being the second most consumed meat in the winter months. 3-4 deer, 2 turkeys a few ducks and whatever i muster for small game is typically the meat intake for the year.
Its not a lot but my family certainly isnt underfed. Beef is too expensive for anything but special occasions now. Venison serves its role in that regard and theres no complaints in the family about it.

My freezer is full of rabbit furs. I mostly use them to practice tanning on. I usually don't use the meat. It's not very good.

And half the year they have warbles in them. My place is sort of ate up with them though at night under the persimmon trees you could almost step on them walking around there are so many. They are pretty stupid too you can basically walk up and grab them if you wanted.

They are so small, at most you could make a doily or like a cuff for a hat or gloves. They are good practice for tanning though because they are so delicate. If you can skin a rabbit and not mangle up the fur and then tan it successfully you should be able to tan anything else.

I generally always do a chemical tan. It is the only way if you want something soft and pliable. What i really prefer is snakeskins. They are so easy to tan- literally like 1/10th the work of a fur and the end product is very good.

I guess the upside is that a cellar will get genuinely cold for like half the year making things easier to preserve with a harsh winter. But the big thing is that a place with a longer growing season will just have much more wild mast and thicker plant growth.

If you are growing plants and raising animals it is not super important, it would really only come into play if yiu decided you wanted to live innawoods (Idk when that would ever actually happen though). I haven't bought government meat in over 6 years now. I feed my family with meat from my rabbits, lambs, chicken eggs, and wild game from my hunting trips.

Aside from chickens, the rabbits are by far the easiest highest ROI. I only have 1 pair, in a 10x10 colony set-up. They produce a litter every 1.5 months of 8-10 rabbits. I slaughter at 12 weeks, and by that time there's already 4-6 week old grow outs in the other nest.

Each rabbit yields 3.5lbs of meat so each litter, every 1.5 months, is about 30lbs of meat. Which is about 200lbs of meat per year. A cow requires an acre, takes 4 years to grow big enough to slaughter, and yields about 400lbs of meat. In 4 years from a 10x10 area in your back yard you will get 800lbs of meat, double that of a cow.

Homegrown rabbits are delicious and fatty, wild ones are groce and lean. My favorite way to cook is brined and smoked with some garlic butter. We also make soups, pulled rabbit sandwiches, basically anything you would do with chicken breast or tenderloins.

Rabbit starvation is only true if you butcher the rabbit into nice little morsels of lean meat like you're eating at a restaurant. There's a reason why places that eat bush meat like guinea pigs, rats, cats etc. (all very lean, some even more than rabbits) roast them whole on a stick with the skin still on. The small amount of fat these animals have is in the eyes, skin, brain, bones, around the organs, so if you cook them whole (maybe minus the organs), the fat renders out and the meat soaks most of it up (or you can catch the drippings), leaving it more nutritionally whole. Depending on the animal it also tastes better, but not always, some animal fats are vile.

Most of those old timey recipes for rabbit come from the Depression era when people would go out and hunt for whatever meat they could find.
There isn't a lot of demand for rabbit, so it isn't economically viable to have industrial scale rabbit farming like they do with chickens. You can't just breed some rabbits in your backyard and sell the meat to restaurants, meat that is sold commercially (especially mammals) has to have all of the USDA inspections and approved facilities and red tape. It's not worth it to produce cheap rabbit meat because almost no one eats rabbit as a regular staple.
And since rabbit meat isn't commonly sold commercially in the US, you don't see it in restaurants or grocery stores other than niche/boutique/exotic type places.

Have to really know your shit to cook rabbit, too. Tough little creatures; best if you can stew them all day. I've had it fried, and it gets really swingy on if you can chew it or not depending on who cooked it.

I still eat 3 or 4 a year. Squirrel I don't mess with much anymore, too much work for too little meat, but they're good, too. Fishing is iffy depending on the water; just so much shit dumped/drains into everywhere. But still viable. No one bitches about a fishing pole as much as they do about a gun. Foraging is cool, if you have someone to teach you. Lots of fruits and mushrooms everywhere.

I think people got away from that kind of food because it's seen as low-class. After all, a rich bitch can just buy whatever, they don't have to sully themselves with the procurement of sustenance.

Probably because they are seen as pets buy a large part is cost. Rabbit farming by the numbers is twice as efficient, or a bit more more than beef but people buy beef for the taste.
A better comparison is chicken to rabbit because both of them are considered staple meats and the only reason rabbit is seen as fancy now is because of obscurity. When it comes to yield chickens also lay eggs.
Basically, chicken is more cost effective than rabbits. Rabbit is seen as cleaner and more of a delicacy.
A bigger question is why aren't horses that are put down just eaten in the USA. There is no slaughter houses licensed to process horses. American women and horses is a retarded combo. Dump 1000 bucks a month into it to ride it 3 times a month and then fucks its ankle up and get killed and incinerated.
American women should not be allowed to purchase animals as pets with written consent of a husband.

Liver, tounge and such can be found here too if you visit a proper butcher, pig head aswell but it's not like they put those up on display anywhere. It's all fading out with younger people getting grossed out by it more and more. Pig brain sounds rad but I'm not sure if I would actually try it unless you'd make it smell very nice or I'm proper hungry and there's not much else of substance. I've been working on weeding out some old gardens with my uncle over the past summer and autumn so I'm really looking forward to see how the cultivated plants developed that we set free and which of the weeds come back. Here is a dish to try for you guys:

1 cup rice
4 cups water
4 chicken thighs
1/4 ginger
1/8 cup green onion
1/2 cup chopped carrots
1/2 cup chopped celery

low boil water, rice, chicken and ginger until meat falls off bone. remove bone. put heat on low/warm. add carrots, celery, and green onion, stirring every so often. eat when vegetables have softened.

Europeans knew this dish as porridge. Most of the asian world knows it as Kanji, unless you are Cantonese, then it is Jook.

Super easy to digest, and cheap!
