I recently came to the conclusion that tipping IS necessary for services like waitering.
If waiters are paid $2.75/hr, they will have no choice but to offer great service to get tips in order to afford living.
But if you pay them all base livable salary, where's the motivation to be a good waiter? It disappears because now they don't have to try so hard for tips.
In short, tipping is good because it motivates waiters to offer better services.

Whereas in tip cultures, servers will dish out poor service to a table they think won't tip well. That is a consistent ethic in the food industry. You can find this all over the internet. tipped jobs are the best low skill jobs, so it’s practical for people in education or training to take them. we also appreciate restaurant owners for providing a service to the community, despite foreknowledge that its margins are small and most fail, so we do not expect the owners to be able to give waiters decent pay.
not only is it good for society to reward the waiters behavior in choosing this role until they are equipped for skilled labor (instead of choosing a physically demanding job that pays lower but allows for shit behavior outside work, while being too exerting to be productive outside the menial role- servers have to have a baseline of presentability and manners, so it’s a requirement that they be good actors outside work), i also sympathize as i worked a tipped job while working towards my current position, which pays just shy of 100k (vs the $14/hr base pay at the restaurant- i can afford to slide $10 on my $50 bill), and i was generally liked so the generosity of others averaged my pay to around $25/hr, so i see it as paying it forward.

I used to be a server and I made well above the national average wage because of tips, and that was before tips became tax-free. Going to a "real" job was a major wage cut for a long time.

Being a shitty waiter in France will get you fired very quickly, even in cheaper restaurants. As a consequence, I can't remember the last time I had a bad experience with a waiter, and I go to restaurants about 2 times a week on average.
It should also be noted that even fine French "gastro" restaurants were cheaper than any US restaurants I went to (that weren't shitty diners), without even counting the tip, and I sure as fuck wasn't in some tourist trap area.

I actively avoid restaurants that ask for tipping, gratuity included. Current theory is that anything less than what they deem is acceptable = spit in my food. The only exception to this are places that make the food in front of me.

Deli's and some diners are pretty much it, I don't go out much anymore.
