>Why shouldn't we ignore those instincts
Because they drive you and most people, you don't get to just ignore them, even if you're aware of the process, they affect your behavior and feelings and that applies to everyone else as well, meaning people keep each other in check.
All of your feelings can be reduced to biology and being aware of this fact doesn't mean anything, you still feel the same things, your brain is a machine that reads input and processes information. By the time you're aware of any the results, the process already happened, your entire consciousness is just a collection of instincts and sensory inputs, there's no master process ruling all of it.
People who are capable of acting against the instincts that drive people to be good are perceived as an enemy by the collective and can gain some advantage, but they usually just end up being killed.
