Because "Style" in 3 is based on the total duration you spent at a certain style ranking while in-combat. Running through the hallways saves you time but you lose your Style bonus since every second you spend not having style built up is draining your performance in the Style category. If you engage with the fight you lose time but gain Style.
5's method of scoring style is just dumb because it's got this wonky scoring category that has it so that having encounters of a few small fries will drain your overall performance since they end before you can get your Style Points up which drags your score down with something like a 3500 point encounter, since you simply can't get a high enough style ranking against Empusas before they die. You actually get more Style points by running past the encounter since it skips 0s in the calculation of the average.
If 5 counted skipped encounters as 0 that would actually only make the already fucking annoying stages for S Ranks even more annoying since stages like 8, 10, 12 and 18 all have a whole bunch of "encounters" that's just like 2 small fries. 5 is easy to get S Ranks on most missions but the missions that are annoying to S Rank in 5 are painfully annoying. S Ranks in 5 range from "way too easy, it's literally just something you get for clearing the stage" to "you have to cheese this with the camera trick and dance taunt or a No Damage bonus."
3's Rank system isn't perfect but I'd say it's still really good and in the mechanical way it scores you is the best in the DMC games.

I have a solo trip to universal orlando coming up and I have never been to a water park in my life even though I know how to swim pretty well. How do I spend a day at a waterpark all by myself without looking like a social retard?
