You're not allowed to leave during that sequence because it would break the script and not accomplish anything useful. The narration is simply your own thought preventing you from doing something pointless.
Deltarune's narration, in general, is a more traditional video game narrator that will arbitrarily limit you when the story calls for it. It's not like Undertale where the narrator is (mostly) written like a character in the story.
>Did we hijack an already demon thing that's masquerading a soul?
We are possessing Kris's SOUL. Based on comments from Toriel and Noelle about how Kris is suddenly acting strange recently, this didn't happen until the start of Chapter 1, maybe the night before.
The idea that Kris was soulless before this doesn't really make sense when you consider problems like them not being an evil sociopath or "how were they even alive without a SOUL?"
Kris might have, for some reason, somehow, been taking out their SOUL before we started possessing it, but we can only speculate about that.
>Is Kris even aware of the us, [Player]?
Kris is absolutely aware of us. They know that we're watching them, they know that our perspective is limited to an area around the SOUL, and they even know what angle we're watching them from (looking directly at the camera at the end of Chapter 1, looking at us when we disturb them in the Mantle Game, and looking at us when they catch the SOUL in Chapter 4).
Ralsei also knows all of this.

No, Kris specifically started compulsively washing their hands after whatever happened to Dess traumatized them
