So you're taking the text of a stupid ass kid into account for the entire discussion? Noelle mentions blood with food, so it isn't just a weird human thing. Susie bleeds because monsters in this world actually do have blood. Cremation could just be the primary form of corpse disposal in this world, as we haven't seen anyone else get dusted nor are there any other mentions of dust besides Gerson. The entire point of monsters turning to dust in Undertale is because their bodies were primarily magic. Magic doesn't exist in Deltarune outside of the Dark World, which is why Rudy is in a regular ass fucking hospital.
Ergo, everybody bleeds, because that's the only fucking way the story maintains consistent.
