It starts basic, S1 only starts picking up around the middle, but even then it's still the most straightforward Uma anime.
You watch S1 to get context for S2 where the cinema starts.
After that the floodgates are open and you can watch Road to the Top, the movie (called Beginning of New Era) and Cinderella Gray. Do it.

Yes, first season starts kinda slow, but if you stay with it, you'll get rewarded especially with the later shows. Recommended order:
Season 1 > Season 2 > Road to the Top (4eps) > Beginning of New Era (movie) > Cinderella Gray (currently airing)
At the bare-minimum you need to get to Season 2 because that's what sells Uma Musume to a lot of people, it's cinema.
