I actually don't know the ins and outs of Thoroughbred racing other then some self-research here and there as well as 2nd hand info from friends who did work in the industry. That being said, it's only certain breeds vs its own breeds, but because the different race horses are for different events.
Thoroughbreds (the umas) are basically used in all the events you see in games and what most people think about in horse racing.
Standardbreds are the most common horses in cart racing, but I hear Europe uses some other breeds sometimes.
Quarterhorses use to be used for sprinting but got phased out overtime, but they the #1 horse breed in the US and the most likely horse you've seen in Cowboy movies. Also people in the US, Mexico, and Canada love doing impromptu racing with them.
Arabs are used for endurance and cross-country racing, but as in going super long distances across the desert or other rough terrain.
There's some other miscellaneous racing various as well. Like I think England has thoroughbred racing with small jumps included. Perhaps a UK anon can elaborate. There's various timed events for all sorts of breeds and horse sports but not considered a big deal since people don't gamble on them.

He generally does very well since he adjusted to the latency well where it is possible. You can see him rage when he's the goalie though and that's exactly where you have pretty much no chance of compensating lag. Being a goalie with high ping is absurdly brutal. Only the hardest popens can endure this.
