Ideally, just give up the software needed to run servers to the players themselves atleast when the publisher stops supporting servers to the game themselves if they design them so. This isn't a weird ask to prepare for since all online games worked this way in the past.

the Crew only decided to update their game to work offline a while AFTER the bad press around SKG came out
BEFORE it they announced it would just be dead and players were gonna have to deal with it
