Kris is limiting as much information accessible to the player as possible, because he realizes that knowledge is power and the more the player knows, the more dangerous one is. Compare, for example, a blind first run and a second run where the player is hunting for secrets. I missed the Devilsknife, Shadowmantle, and Gerson's hammer on the first run and sold items I could have combined. A bit of knowledge makes the player much more powerful.
We cannot communicate directly to Kris and even if we pick the most benign options, there is no guarantee of not having an ulterior motive on our part (even if it's something as banal as hooking him up with Noelle or Susie). He's clearly unhappy about being possessed and it seems to be a means to an end for him. This end looks to be the conspiracy he's mixed up with. Bringing the player in on the conspiracy (even without knowledge of Gaster and whatever his motivations are for summoning us) is too much of a risk and these delicate plans are too easy to disrupt.
tl;dr there are lots of reasons to be hiding stuff from us and things could go off the rails badly if he wasn't guarded. This is why he's "the Cage."

I do think the "TRANCE" effect isn't doing as much as people think it is. I mean, she had the ring on and snapped out of it with Berdly. I think at most it's either making her more susceptible to our direct commands, or make her treat reality more "like a game" or something like that. After all, she likes breaking games.
