The Knight is only real in the dark
The Knight cannot exist in the light. That means that they can only manifest in the dark worlds and at night as evidenced by chapter 3. We know the Knight can manifest in the real world because of their particles. You can make an argument that it was the Knights helpers instead, but there is no decisive evidence either way
Since the Knight can only manifest in the dark that means they need helps to open fountains to do their bidding. This would also explain why Dess is lost even if she is the Knight, beyond her being transformed.
Their confirmed helper in the light world is Kris. But Kris cannot open the church fountain or the lab fountain (the latter fountain is badly written in general so I wont get into it)
This means there has to be at least one more helper. That could be Carol, but how could Carol open the fountains in the church? Is the game's perspective lying to us or is there another helper?
It can't be Asgore if that is the case, I mention him because he too is a likely canditate see his black shard scene and him working with Carol, possibly in both ways (and possibly sharing a motivation with Kris)
Is it Alvin? Is it Rudy? Is it the whole town? I don't think there is enough evidence to say for sure.
If you believe that the Knight cannot manifest in the light world at all and couldn't kidnap Undyne to the bunker themselves that would mean the helper is strong. However that would only leave Asgore and as mentioned he too couldn't open the church fountain.
Carol could maybe have opened it before going to her house, the church is right next to her office, but who knows?
The point you need to know is that the Knight has another helper than Kris in the light world.

See, what happened is that after Dess died, her mother found her body and tried to revive her using a shadow crystal she found in the shelter. This worked, to an extent: Dess was back, stronger and better than ever, but without anything that really made her "Dess" in the first place. Her essence became inexorably tied to the Dark, and now she is just the Knight. Maybe if she eats enough eggs she might remember who she really is, but who knows?

By the way!
If you check Carols office after the church dark world the game will specify that it's "empty". That might not seem important since it is late at night either way, BUT this is the only building to specifiy that it's empty. Every other building is closed or nobody answers if you knock. Kris refuses to open the closet in the church because there is someone inside. And the game specifies that the mayors office is empty in particular.
Make of that what you will.
The issue is still, as before, that Carol couldn't run over to the church before Kris and Susie to open the dark worlds. And if she opened them before she wouldn't need to hide in the closet. Unless Carol became the Knight.
Unless you want to argue that the chapter 3 Knight and the chapter 4 Knight is different it's hard to argue that chapter 4 one is Carol. The chapter 3 was animalistic and it didn't seem like a costume with that eye in the middle.

I'm not entirely opposed to the idea, but I have some problems with it. The first is that the Knight isn't seen walking around normally. And that Dess is lost in the dark/between the code. As others have pointed out the problem is that Dess wouldn't be missing if the Knight could stroll around. The anatomy of the Knight also seems transformed which fit along with the general hints and conjecture that Dess was caught and transformed in the dark. The lines in the code seems to suggest the person stuck there slowly coming to accept the dark and the even appreciate the scratching noise they hear (presumably from the cat). So the theory goes that Dess goes missing, gets mindbroken into being transformed, becomes this thing that retains a sliver of it's consciousness and can only exist in the dark. Which is why Kris seemingly wants the Roaring to happen.
But as you pointed out the dark shard is real which seems to suggest that their weapon is real at the very least. Which people have suspected to be Carols katana. But from what I remember it's not actually chipped if you spot it in chapter 4, it's still whole.

At the very least, we can all agree that the Knight absolutely needs to move around at night in order to avoid being seen. They may or may not be able to move around in the sunlight, but they never will because too many witnesses.

Personally, I feel like the armor - which would be the same in both worlds - might act as an environmental suit for Darkners, allowing something that can only exist in Dark Worlds to carry the Darkness they need into the Light World.

When Ralsei explains what dark worlds really are he shows the visage of FRIEND when talking about what is darker than dark. This implies that FRIEND, whatever it is, only exist during the darkest dark. This is seemingly reinforced with their apperances in game, watch a video on it if you don't know them all. The videos neglect to show the FRIEND inside of the vending machine that smiles and the one on the sweepstakes site, but that is all of them.
We see the cat throughout our own journey, showing up when we are pursuing freedom and things related to secrets, like the mantle game and the mike minigame, queens cellar, etc. Besides the chapter 3 showcase there is no obvious mention of friend, they only show up during more obscure parts of them game.
This leaves me with two options
Either friend is primoridial darkness, a type of darkener that exists everywhere when it gets dark, kinda like a titan. It doesnt really mean anything it's just a "generic darkner" so to speak
Based on their very limited behavior and apperances this doesnt seem too likely, see my logic above and reflect on it yourself
The other option is that they are an omnipresent entity that can only appear "visibly" under certain conditions. They seem to be important. As many others have conjectured, they seem to be this game's version of "satan", or something to it, tempting you towards.... something. What their exact motivations are is uncertain but they are associated with freedom. We know to little about what that is, what the shadow crystals mean, and everything related to this to make a real guess. But FRIEND seems interested into pushing you towards this.
The last third option is that they show up because Kris summoned/encountered them in the past and they know show up to track his progress. It doesn't make sense to call it the big bad yet, but it is mighty suspicous and we should be doubting the value of freedom if it pushes us towards it

Gonna be completely honest, I could see exactly this happening and the game framing it as a good thing. Here I would just like to point out the prophecy. It says "the heroes will duel with the Knight strife by strife" or something. The way I understood the prophecy based on the church is that the roaring will happen if it is followed. And so sealing the dark worlds and making sure foretold part happens should probably lead to the Roaring?
From a narrative perspective the game is also building up to something big happening. So it would be weird for the Knight to have made 0 progress so far and then opening 20 fountains into the Roaring.
However, as you pointed out, they seemingly could do so therefore there must be a reason they are stalling. I say that reason is that they have to wait, maybe so they can sacrifice Undyne and do something else instead?
I feel we lack the last few pieces to really make accuracte theories. The material runs out just short of a real answer, that is what I mean with my previous comment about us knowing nothing abou the prophecy, the roaring, the deltarune, etc.

Does anyone else not really enjoy the whole us kris and real kris thing?
What's appealing about this flavor of narrative based video games to me is "being" one of the characters and being as much a real part of the world and story as the NPCs are. when the meta level player/character distinction is part of the game's universe and it's canon that you're just kind of intruding on some world you're not a part of and stealing someone's identity it feels like the game is intentionally trying to invalidate the good feelings a character-driven RPG normally gives you.

It's an interesting gimmick and I like the idea of it in a bubble but it in this particular game it feels very at odds with the emotions the game otherwise wants me to feel. I hope it ends up being the case that the player is the "real" kris finding its way back to its body or something.

In the same Chapter the Weird Route has you directly reveal YOURself to Noelle, something that Kris wants to avoid at all costs (they will literally grab her and run out of the room if you let yourself get spotted before you re-possess them) and they will beat the shit out of you afterward for what YOU did

You aren't going to get closure in the same chapter. Kris believes that they stopped you from knowing what they don't want you to know, they aren't going to make a scene about it after the fact and make people suspicious
