You can do that in the original since the mannequins are frozen and passive until they're activated. You just need to hit L2 to reposition the camera so it's directed forward.

Cool, thanks. It's weird they don't even tell you about the blocking mechanic in the manual for SH2 so it just feels like an afterthought even though it isn't really in practice but the gameplay loop doesn't revolve around that mechanic like it does in 3 either. I only accidentally found out about it when fighting Eddie in phase 2 but I found it hard to reliably get the timing right with his punches.
