I hate Sans and Toriel, but I'm gonna give the benefit of doubt to Sans, and I'm gonna assume, just like in Undertale, he knows more than the lets on, and he's aware of what was gonna happen with Toriel, with the Knight wanting to capture her, what happens in the church in Chapter 4, hence him "befriending" her and getting her drunk is simply a way of pulling her away, so overall he's just trying to save her, even if his methods are not exactly the best.

Toriel, on the other hand, while her actions probably saved herself, I still cannot excuse.
