Ralsei wants to change the prophecy because it currently portends that the Three Heroes (him and his friends) will have to suffer an unspeakable tragedy to save the world(s)
Gerson just seems opposed to the concept of prophecies and predetermined fate in general

Think about it in terms of FATE
There are certain actions that we will take no matter what. It's only through out Determination - by actually playing out the story - that we are able to change our FATE and do things like collecting that Shadow Crystals.

>The last part of the prophecy is the end of the dark and as such the darkers
The Prophecy says that the Worlds (plural) will be saved by the heroes. You're not just saving the Light World, the Dark World needs to exist too.
>The point of the experiment was never to alter the prophecy
Then what does Gaster mean when he says he wants to "CREATE A NEW FUTURE WITH YOU"?
In both Undertale and Deltarune, Determination is "the power to change FATE". We have the power to change the Prophecy, that's the reason we're here.

The Fountain, not the Dark World. The way she produces the Fountain plays out exactly the same as when Kris does it, down to her eyes turning red, and her fountain is visually the same as the ones produced by Kris and The Knight in previous Chapters. It's not unstable or unusually smaller, like the Fountain in the first Sanctuary.
The differences in Susie's Dark World are attributed to her different personality/worldview, not the fact that she's a monster or lacks Determination.

>A monster that's inextricably tied to the player's soul, is prophesied to receive it later
This is your speculation, not actual facts.
>who gets the soul's attention whenever the point-of-view is not currently on Kris
Because Ralsei deliberately misdirects us toward her, which we can just ignore later. Susie isn't a SOUL magnet.
>and is repeatedly referred to as a fate defier
Now you're just supporting my argument that Susie is in fact a monster with Determination.
