Familiarity. Same reason the boomers liked the old timelessness that Cracker Barrel was offering. Its the kind of sctick they grew up with around thier grandparents/community/what have you: that folksy charm that only really existed when radio was the fastest method of communication, if that. Gens X Y and Z all grew up in more interconnected worlds, so they're used to more streamlined esthetics that had to keep pace with the ever shifting changes of an increasingly globalized society. Now that thier pretty much the ones calling the shots more or less, companies are appealing directly to them since thats where the money is gonna be flowing from for the next decade or so. Its not so much the younger crowd prefers the Starbucks look, its more just the law of the socioeconomic jungle playing out its due course.
