I'm sure this thread just turned into bitching about the one game in OP, but my actual answer to this would be Dwarf Fortress and My Summer Car. I can't really get myself to play either fully committed but I really appreciate the way they were put together and what they are. I feel there's a venn diagram crossover between this category and the "games you're a fan of but have not really played" topic that's been hot around here lately.

I'm an architect, so I get a lot out of choosing a site and designing the spaces, then slightly less out of managing the workflow and supplying demand, so I tend to peter out before my forts reach any dramatic climax.
