I don't think dess is the knight but there's definitely something fucked going on with her and toriel.
There's definitely some grim foreshadowing going on as well. Kris and dess mirror their movements until they both solve a puzzle, at which point we only control dess and not kris. And?, if we finally get them to meet... KRIS kills dess, not us. It gives me some strong twisted sword vibes with the trance down effect

My aggressive overanalyzing has led to a conclusion: the knight (or at least the shadow of the knight) is FRIEND, and my reasoning isn't easy to refute: "that chair is going to kick your ass"
ALL of the ball fortunes pertain to chapter 3, even the one about mizzles, so necessarily the chair-based ass-kicking happened in chapter 3. But where? Where did the chair kick our ass? The only ambiguous and difficult fights in the entire chapter were the knight and ERAM, and even then ERAM's dialogue ("enough of that, we both have work to do") heavily implies that they're the knight anyway.
There really aren't any alternatives.
