Why did Verso decide to change his appearance? That seems a simpler solution to you than Alicia making him mortal when the last thing we see her say to him is this?

She at the very least changed his appearance, but based on the dialog, it's much more likely she painted away his immortality. The most likely reason (in my opinion) that he's hesitating is because he's based off of someone who sacrificed his own life to save Alicia, and now has to watch throw that life away as a result of her own guilt on the matter.
