It's as old as beer and bread lol.
Its been used for levainer because it has east and carbon dioxide and it tastes good from the hops and what not. Probably the first yeasts used for bread making was the by product of beer making which is yeast.
I've made potato buns for burgers, the potato gives it flufiness and traps the moisture so they are nice and soft.

If you are into healthy eating thats probably the best bread to eat.
I'm not really a fan of those, I don't even like whole wheat.
