Defintive Trilogy is a disaster, although the original ports aren't that hot either. 3, Vice City, and San Andreas are called the 3D trilogy, I like them the best. 3 is pretty rough, I'd say VC and SA are the ones definitely worth checking out. Not exactly sure what the current go-to community patch is, just look up "best way to play gta 3d trilogy" and pirate the originals.
Otherwise, 5 is the prettiest, and sands away all friction points with mid-mission checkpoints and giving you weapons for free. But the mission design in the newer ones is very scripted and restrictive, and the games are bloated with life sim bollocks and exposition filler.
