That's not a problem exclusive to elves, D&D-settings and the alikes have a multitude of various stupid subraces. But people only like to bitch about the elf subraces.
What's true is that you often get your high, wood, dark elves, while the same setting or game may only have one dwarf type or at best good dwarves and evil dwarves.
But these three elf-subraces are distinct and offer very different themes and potential for characters/factions, whereas dwarves are constrained a lot harder into their niche and very unflexible.

This argument fails since it applies to D&D-dwarves, who still have a similar number of dumb subraces.
The notions of "conservatism" and whatever you ascribe to elves as their opposite don't have anything to do with the amount of subraces. Especially since it's often the very traditionalists that leave their homeland to find a new place to be grumpy old bastards (aka dunmer). There are not more elf-subraces, because firstly, there aren't. And there are not more elf-subraces because some elves decided to be more liberal than others. The subraces can be the result of elves once having this massive population all over Faerun, and guess what, with enough people far away from each other, different cultures emerge.
I think it was gold dwarves that really like going around being mercenaries or shrew traders.

There are coomers that only care about elves having females.
Sometimes, elves are just the right powerfantasy. Agile, magical, powerful, skilled, good-looking. That plays a part too. Some people enjoy being a muscular, boisterous green barbarian, others being an elegant pretty boy that styles over lesser races.

Elves beyond just these aspects can appeal to a lot of different people. The kind of people that walk barefoot everywhere might like wood elves for being chill forest hippies that respect nature. There is also the kind of romantic, idealistic guy that can cite poems and enjoys the idea of a highborn race that is more spiritual and noble, as something to look up to and fashion yourself after, to better yourself. Some people might like dark elves because he enjoys edgy stuff, and they embody that well while being sophisticated and elegant about it (a similar appeal like vampires).

There is also the melancholic appeal of the greater past, the golden age. Similar to how people might enjoy wandering around ancient ruins and reminiscing of a past he never knew. Elves embody this very well, in many settings they have a lost greater age in the past, before mankind. It's especially enjoyable if the elves are not just mopy assholes and actually keep on, fighting for what's right, beautiful and virtuous, being the light when the nights grow darker and darker.

Cyruella of the royal clan heard there was a young ravener encroaching on her lands, at least according to her panicking shepherdesses. Taking her trusty staff and two elves of Silverbeam house to frighten off what was surely just a lone wolf, to her horror no it was actually a sub-adult ravener. They usually don't leave the western gate.
It seemed it was drawn to relics of when humans had ruled these lands, making its nest in a destroyed building.
The fight was short, but it did cost the life of one of her followers when a skulker was drawn by the noise and ate her face off.
They then bravely ran away from the many beasts they'd need the hunters to take care of because they were done.
The Doomed, inheritor courts vs the devourer. Not sure how I feel about the system. A bit too plain for me thus far

Not going to pretend to be some ancient grognard, only know this from the video games. But in AD&D like Baldurs Gate 1/2, or Icewind Dale 1, elves would get a bonus of + 1 for using swords and bows. Elves loves a certain type of men, at least stereotypically. A more rotund and clean shaven man.
As a small form of rebellion from their oppressors, and as a call back to when they were free, men will undereat on purpose and try to get as muscular as they can. Combined with not shaving or cutting their hair to try and emulate their free ancestors.
When an elf does marry one, she'll invariably turn her more to her ideal form. The name for such men among human populations is "elf-fed" and it's meant to shame them for accepting to propagate their enemy.

Been working on a homebrew version of Astral Elves.

After Mystra is forced to regulate magic following Karsus' Folly, the elves lose the mythals that protect their cities.
Their cities are assaulted by the horrors of the world. Horrific event, thousands of civilians slaughtered, etc.
Some of the elves feel betrayed by Mystra because the elves played no part in Karsus' Folly. Corellon will not answer their prayers for some reason. They rally around a leader.
This faction of elves is lead on an exodus into the astral plane by this Moses-type individual in search of Corellon.

After years of travel they find Corellon; Corellon reveals he is also upset with Mystra's treatment of his people, and he had been preparing to gift them an alternative to the weave.
Corellon walks among them for years and teaches the high mages of the exodus psionics, hides them from the eyes of Mystra to conceal his discontentment from Mystra, and gives them sanctuary in the astral plane.
These elves grow to hate magic, Mystra, and humans.
The elves acclimate to the astral plane. Their skin becomes very pale with some elves having a slight lavender hue.
Their eyes are similarly colored and begin to glow or gleam like stars. Their hair is platinum blonde or monochromatic.

The elves can't age in the Astral Plane. The original members of the exodus were frozen in time at the age they were when they left.
The Moses-like figure becomes more like a king once they have a sanctuary city in the Astral Plane.
He is deeply upset with the fact that his people can't reproduce.
He rallies his people behind this cause and leads the conquest of a moon in a wildspace system.
The Astral Elves finally have a place to raise children again.
Some of the children that were members of the original exodus like their forms and refuse to reenter wildspace to grow up.

The Astral Elves amass an empire, continuing to conquer uninhabited and inhabited pockets of wildspace.
An empire of psi warriors and psions.

But soldiers would have like a porcelain looking visor that covers their eyes.

I'd like to think mithril is extremely common in the astral sea. Like there's just asteroids full of rare materials.

They're capital ships have decks where choirs of female psion bards in like white cultist robes with porcelain visors chant to groupcast high magic esque psionics.

Marriage is not always the same among human cultures, so it would defenitely be different among such a long lived species.
The setting I play in specifies two types of bond in the elf source book. One is temporary for as long as each party agrees. The other is a bond for life when soul mates meet. Elves get reaincarnated and each ones soul has a soul mate. Unfortunately for them elves can be reincarnated anywhere, sometimes in warring nations, among dark elves, or in isolated communities and the world is quite large. So the second type of bond is rather rare.
Having a temporary bond with a human isn't outlandish. E.g. when an elf lives among humans for some reason. Usually the elf makes do with human men or women for a lack of other elves in human settlements.
In other cases elves usually don't just get together with anybody. If it happens it's usually legendary heroes or otherwise exceptional individuals that arouse the interest of elvish individuals. In the system it's even not that unlikely to roll up a human that would be considered beautiful among elves (beauty is a stat rolled on a d%. 81 is the minimum for elves), although a little rough.
System and Setting is the fifth edition of midgard, the German system. The elf book was among the last publications for the current edition.

Being the way that they are, elves live in fairly cramped dwellings where they can fit as many as three families in a three story building of stone.
Humans live in spread out shanty towns made of whatever they can make their dwelling out of, such as mud or garbage that are even more cramped and much less furnished.
