Just like in Undertale, the soul in Deltarune stands for a virtue/principle of the protagonist. In Undertale, it was Determination, and it could be used for both good or evil.
In Deltarune I wouldn't be surprised it stands for Love or something, since it can either be used to care for their friends and family or to cause them harm through obsession or trying to mend a relationship/past that cannot be brought back anymore.
