If you want to build a gaming channel, abuse shorts, posts, and polls. Those are all pushed more than anything real you would make, and can put eyes on you. This won't always equate to views, plenty of people have community post only relationships with creators, but, it can help.
And find a niche. Find a series or genre to be a central tent pole. You don't have to always do those, but a good amount should be, until you get more established to retain an audience. You're not going to compete as a general video game creator, but you can probably secure some niche if it isn't too saturated.
Keep a somewhat regular schedule, the algorithm hates it if you're irregular. Spend some time prerecording some stuff to fill in for days you end up missing.
Talk. About something. Have character. Raw gameplay is a dime a dozen, you need to add something.

i start a channel every once in a while and stream while talking to myself for 8-12 hours at a time and generally always get up to 20 viewer averages within a few months

In addition to their obviously negative qualities, what they have that others simply do not possess is tenacity. I wanted to quote a book, but to keep it short - you need to decide if you want to simply make YouTube videos because you like doing it and you want to keep making them, and whatever happens - happens, or if you want to become a famous watched YouTuber. If you have fun making videos, then just keep at it. It doesn't matter who you are, what qualities you have, who watches it, none of that. You can just do them until the end of time, and if somebody watches them or doesn't - it's all the same. If you want to be a YouTuber, make money, get views and clout, then you can go ahead and google, chatGPT or whatever the fuck the nearly 5000 videos that outline what you need to buy, get and do to make it. Start botting. Advertise literally everywhere. Spam videos, shorts, posts, threads, graffiti your channel on the back of busses, collaborate, get in an agency, suck famous dick (figuratively), and keep doing this until you are a success. Either way is fine, just be real to yourself about it so you don't have any regrets later in life.
