I really enjoyed the open world exploration of Elden Ring. Not really on the comfy side unless you look up some mage builds and the like though.
Bethesda games and The Witcher 3 are a given and I'm guessing you've already played them.
Kingdom Come: Deliverance is really good, haven't played the second one though. Again, not that relaxing since you have to get used to the combat and keep up with Henry's needs, but it's not that stressful.
Mad Max and Shadows of Mordor are closer to a Ubisoft game, but they're not terribly bad and are quite ideal for those times when you just want to shut your brain off.

I got Subnautica but I don't think I like it. I'm just swimming around, clicking rocks, to swim back to my pod, to use a menu to make shit I don't care about.

Yeah exactly, HK and Blasphemous are all about combat challenge and oppressive atmospheres, whereas Ori feels more like a flow state platformer with light combat second. If someone goes into Ori expecting Hollow Knight levels of boss mechanics they're gonna be disappointed, but the movement is buttery smooth, especially in Will of the Wisps. The chase sequences alone make it worth playing.
