Spear has an aerial deflect that stops a single attack and flips you around. Dual swords' parry come in the form of clashes. You dont have a dedicated parry button. One handed swords also have clashes but its a lot harder to pull off because of how much slow it is compared to dual swords but the flip side is that one handed swords are also the mage build weapon so it allows you to do fancy spells. It does have a fancy evade that covers a lot more distance than the normal dodge.
