Godot is fine. I don't use it due to specific limitations it has with the rendering stack, but overall it's completely adequate as an engine for beginners.

not sure what you mean by "heavy". it has a huge feature set, but you don't need to use everything in your project. you can still create bare bones 2D games, the engine isn't exclusive to high fidelity 3D games.

Why would you not use GDScript? I think it's silly to fight against the native language. Like you said, you need an external editor or plugins, and the C# side of Godot might not be up to date. Switching to a new syntax is not hard at all, it's mostly about getting to know your functions which is unique to every code base. And if you care so much about optimization, then you shouldn't be using Godot (or even C#) in the first place.

I use Godot because I ain't doing anything fancy, and because my project loads up a cold boot in under 3 seconds.

Meanwhile in Unity or UE5, I'm sitting there for 30 seconds minimum.
