I'm 25 hours in-game time and I've played through it 3 times. You can get slightly different endings without additional per-requisites by choosing a different option after the boss, or losing to boss. Then do a full 0 SEN run to see all the differences.

First off, people dying does not matter, you only miss out on one non-progression critical ending (B) by not doing it.
Secondly, you can in fact do multiple character quests in a single run, your issues are that your routing sounds like ass and that it sounds like you haven't put 1 and 1 together as to why your fuckers are even dying in the first place. You can prevent everyone's deaths in as little as 4 Progress IIRC, and Progress only updates when you update the world state by doing something like stopping off at a bonfire.

Since theres newcomers now, I will give advice as someone who beat both games legitimately.
BS1 is easy, you just need to the Drake Sword. It has a fire AoE attack that pretty much carries you the entire game.
BS2 base game is easy so do whatever, but when you get to DLC3 the difficulty spikes. You WILL have to grind a bit if you wanna do it legit, but in my own experience I just got both my Attack and Speed to 9999. Having the max HP you can obviously helps as well, and having every weapon maxed out is recommended. I think you can randomly find weapons in the Chaos Dungeon chests, so just go there to grind and find weapons. If you want/need more HP, one of the swords maxed out has a skill that buffs your HP and defense, I think its knight sword or whatever, very useful skill. Also hourglass items are game changer. DLC2 and 3 are hard af but probably the most fun RPG Maker combat you will ever see.

If you turn those scenes off, sometimes you will have no idea what the fuck just happened.

The start is surprisingly tight, relying on you parrying and dodging the enemy and having some kind of tools to get around evasive of physical resistant enemies.
Then there is a phase where you get summons and weapons options. The summons are a huge power boost, I'd say more than traditional party members in RPGs. You can treat normal mobs in hard areas as boss battles and get around them with summons. The actual boss battles feel like standard final fantasy stuff.
But it starts falling off and turns into a DPS race once you get some of the good stuff. For example I got a new weapon and now it completely carries me through previously difficult content.

For the H content there are few round asses but nothing I would dream of fapping to. It's more like a power fantasy making true the "grrrrr evil woman needs physical correction" meme

BS1's combat is really easy to break if you're halfway competent at JRPGs, and the second's not that much harder to break either, although its DLC 3 expects the player to have at least some active understanding of how shit works and what tools you have at your disposal.

Equipment giving you more actions is pretty rare but equipment giving you speed, which has a similar effect is everywhere. And in this game acting faster than the enemy is absolutely 100% necessary so that people would first focus on their speed is pretty obvious.

Only if you're doing a SL1 run, and even that's somewhat debatable early on, on a normal run your Speed should be fine enough once you find some speed rings and totally ignorable later, shit effectively caps at 1k anyways. Having two or more turns per turn is almost always better than getting your turn like 10% faster unless the boss is somehow OTKOing your ass right at the start of the fight.

It offers a bit too much freedom for the player. You are able to slip away from the fucking tutorial area in several different ways instead of being railroaded to the beginning area. And in the beginning area most people seem to miss the tavern where you are straight out told that Alice went to west over the big bridge, where the enemies are handleable.
In dark souls terms the game gives you the option to dive into catacombs if you don't feel like exploring Undead Burg first.

Dude, multiple actions become only really valuable (and necessary) when you have endgame spells and weapons anyway. Also like I said, the equipment giving you multiple actions is super rare compared to speed. Saying "this is just basic logic" is so extremely disingenuous it's unreal.
