The original Fallout. Combat is soulsucking with how absolutely nothing it is, and yet it takes forever. There's plenty of strategic RPGs or squad tactics games that were fantastic by 1997, so it was just inexcusable. Then if you bear through all of that, you get quests so shallow with dialogue so amateurishly written and limited in choice that you'd think you were playing someone's shitty mod that they were making as they learned the SDK.

It was one of the longest feeling games to play in my life, which is ironic given how fucking short it actually is.

Monster Hunter 3 Ultimate. I didn't like the camera controls and the focus on most enemies being boss enemies didn't appeal to me.
More recently though, Uma Musume. Genuinely one of the most boring games I've ever played in my life. I don't hate princess raising games, but add JRPG levels of grindan with only a fast forward option, no skip, to the training scenes? Miserable. All my friends are playing it and I genuinely cannot stomach it.

Perhaps you were focused too much on the action elements. Souls games have gotten the reputation of being top of the line action games with le epic bossfights over the years, in part because of a shift in focus from FromSoftware themselves starting with Bloodborne, but the real magic in Dark Souls games is in the immersive qualities. The world and level design feel like real places and work as you'd expect them to, the world itself (and its enemies) are punishing in a realistically harsh way that forces the player to consider the consequences of death more than they typically do, and the story nor its characters are laid out in front of you as if you're the special main character of the world, as NPCs go about their own lives fulfilling their own personal missions that are at times entirely unrelated to you, and there's almost zero directions explaining any goals to seek if you don't choose to engage with any NPCs.
If none of that's appealing, that's fair. But those elements are actually what stick out about Dark Souls. The combat is well polished, but very basic, and I imagine anyone going into the game expecting primarily an action game on par with MH would likely be disappointed.

I stuck out Persona 2: Innocent Sin because it has a vocal contingent of fans that insist its better than the new Persona games, but it's not even better than Persona 1. It's one of the worst games Atlus has made. I also put a good amount of time in Final Fantasy XIV because its fans insist it just has a slow start but even by the end of Heavensward I wasn't impressed by it so I gave up there.

Generally speaking though, I don't mind finishing games I don't like, sometimes they can be interesting in their own right even if I didn't enjoy them, and I'm glad to have played them just for the sake of giving it a chance and forming my own opinion on it.

Sometimes the enjoyment hits hours later before you even know it. I didn't enjoy Sekiro until I beat the final boss.

Literally, I felt immense hatred for the game and when I finally beat that final boss after 4 hours of attempting it I basically thought "holy shit that was incredible" and back to finish up bosses I skipped.

I agree and hell this might be a hot take even for you but even fucking Starbound is better than Minecraft in my opinion. I honestly can't see how people enjoy Minecraft on a casual level. It is lacking and where there is depth it like 50 kinds of blue blocks you can go out and find in case you need an exact kind of blue for your base. Not only I find Minecraft boring but it is anti-fun for me. Being force to play it with friends is the quickest way for me to leave and take a nap instead. Not saying Starbound is good mind you, only that there is at least shit for me to do that can't be done in like 30 mins as a speedrun.
