I can answer that, there actually isn't Birdo as a species. Yes, in spin-offs they've been known to show multiple Birdos, either as background characters or playable, but those games were developed by third parties, not main Nintendo.
Take Mario Kart Tour for example, in that game the naming convention for character alts is pretty particular, you have for example:
- Character (Descriptor)
- Character in an alternate form, which has its own naming convention
- (Color) Character, which belongs to a species where there are multiple of said character
So, let's use Mario for the first two examples, there is just plain Mario as the base, for the first example you could think of something like Mario (Chef) or Mario (Musician). As for the second one, think it like the main series powerups, Penguin Mario, Tanooki Mario, Builder Mario, etc.
Now for the last one though, it's where things get interesting, this one is for the characters of a species, think Toad, Shy Guy, Yoshi, etc. The characters you end up getting are named Blue Yoshi, Purple Toad, Green Shy Guy, and so on. Keep in mind though, that these category can actually combine with the first one, so you can end up getting alts like Yellow Toad (Pit Crew), or Red Koopa (Freerunning)
Why am I mentioning all of this? Look at pic related, notice how it's formatted. If Birdo was a species, it would be Light Blue Birdo, not Birdo (Light Blue). This is not a naming convention unique to Tour, it carried over to MK8 when Birdo got added as DLC, so it's not a one time thing.
More over, in latest games they seem to have gone further into the idea that there's only one Birdo, in Strikers Battle League you can use multiple of the same character if they're part of a species, you can use multiple Toads, and Shy Guys as well.
