I haven't played Bananza but I assume you could very easily say retroactively that bananas in the location where Donkey Kong lives are special because they originate somehow or are otherwise influenced by the banandium root. They never go bad because they have very slight traces of magic in them or whatever that protect them

This would also explain why K Rool wants the bananas in the first place. Not to eat. Just cuz they have some magic properties he wants to use

You think DK ears all those alone? No. He's the ruler of DK Island so he likely distributes the bananas to the monkey people he rules over. He was likely very close to his distribution period before K Rool swooped in and attempted to starve them all.
