Numby has been bugged since release. This is the biggest reason why you won't see that many Numbies.

Basically what NORMALLY should happen is that any follow up attack triggering off Numby also advances her. Think of how Lingsha ulting right after her summon attacks will advance the summon by 100% and let it attack again. However this is BUGGED and does not function.
Meanwhile if those follow ups exist, sometimes Numby gets advanced by a full 100% after just one valid action happens past another char taking their turn.

This was never too important, because few ways to trigger follow ups existed, but with so many more added during 2.X, this bug became rather severe in holding Topaz down.

Archer is pretty fun. Yunli too. Don't have Boothill, but he always looked like most fun break dps that felt satisfying to pull off right. I'd say that outside of Archer, more ignored dps in meta tend to be on more fun side while meta ones are just there to do big numbers only for current meta.
I'll give honorary mention to Castorice though. There is actual sense of control over Pollux and some thinking there of when to let it explode, and how much you want to use Pollux on certain turn. Kind of frustrating that this gimmick only exists with her as this is what everyone expected out of Remembrance as a patch; controllable summons that felt like extra unit. Alas...
