Well, I thought about covering that.
Don Quixote kept pushing Sancho to "have children" and as we understand it, this would have allowed the family to better bear the burden of hunger even if it raised the "total" amount of blood they needed.
Sancho doesn't because to some degree she always saw being a bloodfiend as a curse that she wouldn't want to inflict upon another. Probably more so after seeing her family lose their minds and slaughter everyone.
At the end of the day, as more and more bloodfiends fell to their hunger, attacked a human, and got buried in the hedge maze. The hunger would have eventually overwhelmed all of them, Sancho and Don Quixote included. I think things reaching that breaking point would have been far more tragic than how things went in canon.

Dulcinea just couldn't find fulfillment the same way donreal, sancho and curiambro did. Nicolina could have gone a long way with her skills, she actually was a great tailor and did enjoy making things for her fellow bloodfiends, but the thirst was too great and she was the kind of person that takes it out on others. But Dulcinea was literally just "the Princess", she didn't have something in particular she could elaborate on that could be fulfillment for her, just be something to be admired. So she sought to fill that void with donreal, but it couldn't be done because they didn't share the same ideals and he focused more on sancho.

That's part of the problem but I think the structure was kinda fucked from the start. Very few people actually enjoy working at amusement parks, and taking away their main food source and replacing it with something that he was straight-up told tasted like eating crayons the same time he made everyone work at the park wasn't helping.
Maybe they could hold on if there was a set 'end-goal' Don had in mind where he could promise his kindred would be happy again, but there wasn't (though I guess that is part of the 'winging it' problem).

Honestly it's kinda sad that Don didn't just make his kindred all work as an office of fixers, because I feel that'd actually work out a lot better than La Mancha Land. There's a variety of work the kindred could do as fixers outside of combat (workshop work, insurance apparently, exploration, etc), meaning every kindred could find something they'd enjoy, they could deal with the 'evildoers' of the City (and get fresh blood at the same time), and though they may not be seen as perfectly harmless they could probably get to the point of being accepted as protectors of humanity.
Sure, the rot would probably set in over time as organizations in the City tend to do, but it'd take a lot longer with bloodline-enforced loyalty and Don being able to kick the shit out of any of his kindred that were being corrupt.

The reason people were saying Xichunmael and Rooster Sinclair are meta now and Mao Faust got nerfed are also due to that.
Mao Faust isn’t using her counter so she can’t use the broken 3rd skill spam.
Hierarch Ishmael has a red coin skill that will nail even if she loses the clash and she can actually evade so she will dodge those high clashes
Hierarch Ishmael has Poise (for some reason Bunny Faust doesn’t count) which means she count towards as both Rupture and Poise unit for Gifts. Shit like “need 5 poise units in the team” are valid due to her and the snakes.
Rooster Sinclair and Snake Rodion got Unfocused Volley skills (which will likely have replaced other skills by then) which mean they will be hitting multiple enemies.
You WILL want the reroll Gift because it interacts with Lord Hong Lu’s single coin 3rd skill triggering it twice which means 2 extra unclashable attacks.
