This is an old story, but back when Pokemon Go was still big, I went to a McDonalds at 2am and a bunch of zoomers on their phones looking for Pokemon came in. They were a bit loud, didn't bother anybody (mainly me) and then left after getting some food.

That same McDonalds is no longer open 24/7.

Places used to only be open 24/7 because competition was open 24/7.
Being open 24/7 when nobody else is means you're now the designated absorber of all overnight robbery, shoplifting, tweaker, homeless sheltering, etc. of an entire area.
So in exchange for the pittance you make in overnight sales you get to have your insurance rates, stock loss, employee turnover skyrocket while becoming known as the dangerous place that gets robbed all the time that people don't shop at in daylight now.

Honestly I used to love 24 hour places. I am a nocturnal creature of the night and some of my fondest memories are wandering around my university town at after midnight hours and going to the WinCo or something else wildly high on some sort of fun thing. I was mindful to not make a scene or stand out, there was already plenty of others who would take the spotlight in the depths of the night, eg homeless and crack heads. Now in my older age I don't understand why anyone would go out after 10pm. I'm not even really saying that cuz I'm old but also cuz there's just less places open after this time in general.

So about 5 years ago some people said maybe the police should try to do a better job. COVID changed everything. I live in NJ which is considered the diner capital of the country, because diners were 24/7 and you could go stop into any town in the state and the diners would be packed at 2-3am. Very few still exist past 12am and even fewer are 24/7.

When I was working in Florida 10 years ago, I would tell my co-workers that in Jersey you can start your night at 10pm and still have a fulfilling night. I miss it.

Living in a dying small town with factories, it was nice to be able to get off your shift and go grocery shopping at 2:30 am to an almost empty store.
Post-COVID? The only stores open after 9 pm are gas stations and only one of those is actually open 24 hours. Now if I want to go grocery shopping on a work day I have to get up early and go knife fight a bunch of old people in crowded aisles in order to get my shit and leave in a timely manner.

There used to be a local pizza place here in town that delivered until 3am. It was a godsend for people like me that worked late nights...i usually wouldnt come home until 1 or 2, get drunk then order a pizza. it was fucking awesome.
I changed careers and hadnt stayed up that late in awhile, got completely hammered last weekend, excited to order one of their pizzas....they stopped delivering after midnight AND they didnt even have any dedicated delivery drivers, it was allocated to uber eats and door dash....I couldnt fucking believe it.

I can't think of even any small towns within 100 miles of me that doesn't have anything. Population over 2,500 always seems to have one. That must be a rough 6 - 8 hours of closed for those people who don't have that option. Sometimes you just really need something in the middle of the night.
Usually it's Cornnuts or cigarettes or condoms or some last minute alcohol but maybe it's cough medicine or emergency milk. Maybe you have a hankering for one of those giant mega burritos because you got real baked. But I don't know what I'd do without my local one. If you're up all night on stims or psychedelics and you crave some sort of human interaction it's THE place to be at 3:00.

I managed an electrical supply for years, me or the owner would open up in the middle of the night or on Sundays/holidays for our better customers who had our personal numbers.

When power goes out in any critical places, they need materials to get it back on asap.

The real question is if businesses that used to be 24hr will creep their hours over time, eventually ending up as 24 hour again. The Speedway near me closes at 10pm while the Sheetz is open 24 hours. Even when Speedway is open, I end up at Sheetz, in part because I don't have to think about if it will be open or not. While I don't have access to the sales figures for the nearby Speedway, it does seem like they have less customers than back when they were open until 2am before the pandemic. This is even true during the middle of the day.

Honestly I think it's more that profit-seeking inherently breeds animosity in a zero-sum market, which things like franchised fast-food have increasingly become.

It doesn't HAVE to be zero-sum, but the kind of easy expansion, lack of existing market (along accordingly legal and practical regulation), cheap land, and relatively wealthy plebs that McDonalds and the like could capitalize from the 60s is less and less worthwhile.
The rise of food trucks seem like one of the natural consequences on this,

Economy is bad and no-one can afford to go out and pay $14 each for beers on a weekend anymore, so everyone's staying in.
Its not financially viable anymore for businesses to stay open after 9pm.
