I had a freezer-bowl machine and it never had problems with ice crystals. I made ice cream all summer, every summer when I had it and it was always delicious, smooth and good.
>cleaning lady used hot water to wash the bowl so it was rendered useless : (Condenser types are more convenient, sure, but more expensive than the $20 I paid for my maker. Still, they've dropped in price considerably. I saw one for $90 not too long ago. The only valid concern is the footprint.
Now, onto your ice cream maker: why in the fuck are you churning for an hour? Mine set up ice cream almost instantaneously. I ran it for ten minutes and called it a day. Also, you didn't need to cook ice cream unless you're using egg, which makes bad ice cream imo, or cornstarch.
