All types of waffle are better than the "best" pancakes. After 5 seconds of sitting in syrup pancakes are just mushy shit. Even when they haven't turned to mush yet they're inferior texturally and flavor wise.
Waffles have a crisp exterior that holds up to syrup and adds a nice contrast to the soft interior.

I have a box of oats that's going to expire in a month or two so I want to grind it into oat floar for protein pancakes but I'm lazy and don't have the motivation. I also have a can of evaporated milk that's about to expire. I need to use that too but I'm tired.

If you dont add a splash of vanilla extract to your pancake mix you are doing it wrong. Also if you are making blueberry pancakes with the blueberries mixed in, dont use fresh, use frozen. Fresh get weird and burn/stick to the pan when you cook them.

I made a single large pancake with comically large bluebreeze so the whole thing turned more into a blueberry pancake omelet, but hoo-howdy it was really delicious

This is one I grew up with and is really more of a desert but you could have it for breakfast if you are feeling frisky.
Take pancakes, then get canned peaches in syrup. Drizzle the peaches and peach syrup on pancakes, add a scoop on vanilla ice cream on top, jizz in pants while eating.
If I run out of syrup I just do jamcakes, like 3 pancakes layer each one with butter and jam of choosing before putting another on and repeat until stacked. Tasty

Yes the fluffy ones go best with those.
Also if you use one of those little circular egg cooking things you can put in a pan to keep egg shape you can do it with batter youve added syrup to. Make sausage and egg and have homemade mcgriddles.

ma used to make pancakes like the ones in OP pic with the dark ring around the edge, fried in a bit more oil than at a diner.
I used to the thinnest layer of oil to avoid the crispy edge, but I changed my tune after 20 years and went back to using a couple tablespoons of oil instead.

my mother made pancakes in way too much butter and my brother and I used to get so sick trying to eat them. they were thick and fluffy and just saturated in fat, like a single pancake weighed a fucking pound. but, that hot butter bath did facilitate crispie edges, which of course I associate with horrible bowel-churning pancakes.

now when I make pankek I use the least amount of butter as possible, sometimes no fat at all when I take my time on a non-stick. This non-fat approach is the opposite of the dough discus my mother made and closer to the McDonald's hotcakes

Nah I dont like crispy edge. They should be uniformly soft. I dont cook them in butter I just put a thin layer of olive oil on my pan, then I butter them as needed after they are cooked and I start stacking them. The heat from the cooked pancake plus the hot pancake from the pan on top melts the butter into the top and bottom.

I don't get this obsession with needing everything to be crispy/crunchy. It's so excessive sometimes that it actually diminishes the experience, like how some people overcook the shit out of their bacon/toast so it turns to dust when you bite into it
