You're just misunderstanding me: I said the "sadism" in the movie is over the top even for the Aztec, not the scale of violence, which are two different things.
The scale is simply the amount of violence and number of people killed (the Mexica probably sacrificed a few thousand people a year per the skull rack excavations, pic, so what we see in Apocalypto wouldn't be an everyday thing, but isn't totally unreasonable for special events), the sadism is the glee and zeal at intentionally causing suffering and pain in others.
The Mexica did large scale sacrifices, but they were generally not sadistic, for the purposes of causing pain and fear for the fun of it. As I mentioned, victims were usually well cared for, and the amount of ritual steps and procedures involved in sacrifice ceremonies also required a degree of cooperation on the part of the victim (which is another thing Apocalypto fucks up by presenting the village as an ignorant eden unfamiliar with other towns or cities around them, everybody in Mesoamerica would have mutual sacrifice practices they collectively understood and preformed, at least to a degree), though we also know attempted escapes etc were also a thing.
The exception is, ironically, child sacrifices to Tlaloc, where it was said the amount of tears you induced would bring that much more rain, so in those cases the sacrifice was intentionally drawn out and painful, though even then it's not like the priests would be cackling and getting their rocks off at torturing a kid the same way that in Apocalypto the entire city is basically treating the villagers getting murdered and hunted down like bloodsports and did shit like using the ballcourt as a human shooting range.
The Mesoamericans even HAD bloodsports in ritual boxing and certain types of ballgames, Gibson coulda used those
