For Ukraine this is non-negotiable for various reasons. For Russia, the longer Ukraine rejects the demands, the more territory Russia will press for. By the time the de jure territory is captured the territorial demands will grow beyond that, until Ukraine learns the lesson. Some may argue that Russia demands too much and this is unfair, but it is what it is.
Frozen conflict is unacceptable, it has to end for good.
One of the reasons for why Ukraine wants things to continue the way they do now is because they don't have a post-war future. Their options are

In both cases Russia may or may not exploit the situation further, the guarantees are not there to secure the future of their state and nobody can provide them outside of Russia itself. As such the status quo remains and the war just continues indefinitely until something drastic happens like the front collapse.
