The Knight should be a real character with real motivation (and arguably has to be to be able to use Determination) and if Dess isn't "still there" in some meaningful way even if she's kind of insane she can't have meaningful interactions with Kris or Noelle or anyone else. Of course Toby is going to go with the more complex and dramatic scenario over just having to put her down like an animal.

If you want more actual reasoning, we know that King and Queen and the other Darkners in those worlds were actually made up by Kris and Noelle when they played make-believe as kids, so they're places with personal significance
The old classroom is literally directly next to the Grand Fountain and it was also Dess's old classroom, she and Asriel were Gerson's students
