Yes I am in Texas. Roasting potatoes in the oven? Par boil them first, cut in half, toss together with salt, black pepper, minced garlic, olive oil, rosemary, and thyme then bake them at, like 400ºF. Whipped potatoes start off by baking the potatoes, then peel and add them to a mixer and whip the hell out of them for a few minutes, add some salt, black pepper, garlic puree, butter, and buttermilk, then whip them some more. The secret for great whipped potatoes is whipping a lot of air into them before you add the rest of the stuff.
